Vegetarian meals are a perfect fit for all who see the value of moving towards a healthier diet on a daily basis. This is my specialty area and passion having cooked for a natural foods restaurant for many years.

Sesame Tofu with Stir-Fried Vegetables
Fresh ginger, rice vinegar and soy sauce give this dish its delightful taste paired with a seasonal combo of vegetables served brown rice or soba noodles.

Spicy Pan-Glazed Tofu (Gluten-Free, Vegan)
These slightly spicy skillet simmered slices of tofu get their “yummy” flavor from crushed red pepper flakes, maple syrup, and balsamic vinegar.

Seitan Shepard’s Pie
The Chef’s specially seasoned “wheat meat” and root vegetables is baked with Millet Mashed potatoes and served with a mushroom onion gravy.

Ginger-Baked Tofu
Marinated with a really great blend of herbs, thyme, cloves and a pinch of cayenne, add some sweet, some spice, some tart fresh lemon juice and serve with Jasmine Brown Rice.

Tofu Rancheros
High protein crumbled tofu and Tropical spice blend plus red bean sauce served in flour or corn tortilla make up this traditional Mexican dish.

Seitan Steak Marsala
A Vegetarian favorite — Medallions of wheat meat are seasoned, sautéed and browned and served with Marsala wine, herbs, and mushrooms to create a delicious gravy.

Polenta with Golden Lentil Bolognese Sauce, Colorful Peppers and Leeks
A flavorful combination of ingredients couple a red lentil Bolognese sauce (with herbs, lentils, tomatoes, and garlic).

Fusilli Lunghi with Crunchy Nut Pesto, Artichokes, and Roasted Red Peppers
Pesto made with extra nuts is delicious, crunchy and best, quite a substantial Vegetarian meal!

Wild Caribbean Black Bean Chili
Black beans, onions, garlic, orange juice, orange zest, crushed tomatoes, chili powder, cumin, lime juice and habanera peppers — served over rice with sour crème, cilantro and minced scallions.

Veggie Steak Skewers
Morning star Farm Meal Starters Veggie Steak Strips are marinated in OJ, lemon juice, chili powder and more. They are skewered, grilled and served with a low fat yogurt, cucumber avocado sauce.
